These easy homemade sausage rolls have a juicy, savoury filling wrapped in crisp, golden puff pastry. They're simple to prepare with supermarket ingredients and make a generous batch without requiring much time in the kitchen.
Sausage rolls are made for sharing. Bring out a warm tray for the family, pack them for a gathering or make a batch when you know plenty of people will be coming through the door. Add tomato sauce on the side and watch how quickly they disappear.
Ingredients for Homemade Sausage Rolls
500 g sausage mince
3 sheets frozen puff pastry, partially thawed
1 small onion, finely grated
1 small carrot, finely grated
1 clove garlic, minced
½ cup breadcrumbs
1 egg
1 tablespoon tomato sauce
1 tablespoon Worcestershire sauce
½ teaspoon dried mixed herbs
½ teaspoon salt
¼ teaspoon black pepper
For the Top:
1 egg, lightly beaten

Sesame seeds
Poppy seeds
Tomato sauce, for serving
Step-by-Step Instructions
Preheat the oven. Heat your oven to 200°C conventional or 180°C fan-forced. Line two baking trays with baking paper.
Make the filling. Add the sausage mince, onion, carrot, garlic, breadcrumbs, egg, tomato sauce, Worcestershire sauce, herbs, salt and pepper to a large bowl.
Mix until combined. Use clean hands or a spoon to gently mix everything together until evenly combined.
Prepare the pastry. Cut each sheet of puff pastry in half to create two rectangles.
Add the filling. Shape some of the sausage mixture into a long log along one edge of each pastry rectangle.
Roll the pastry. Roll the pastry firmly around the filling, finishing with the seam underneath.
Cut into pieces. Slice each long roll into your preferred size. Smaller pieces are great for parties, while larger sausage rolls work well for lunch.
Brush the tops. Arrange the sausage rolls on the prepared trays and brush with beaten egg. Sprinkle with sesame or poppy seeds if using.
Bake until golden. Bake for 25–30 minutes, or until the pastry is puffed and deeply golden and the sausage filling is cooked through.
Serve warm. Allow to cool slightly before serving with tomato sauce.

Grate the onion and carrot finely so they blend easily into the sausage filling.
Keep the puff pastry cool while working with it for the best flaky texture.
