These easy chicken quesadillas are crispy on the outside, warm and cheesy inside, and simple enough to make when you need dinner on the table without much fuss. Using cooked chicken also makes them a great way to turn leftovers into another family meal.

Ingredients for Chicken Quesadillas

  • 4 large flour tortillas

  • 2 cups cooked chicken, shredded or finely chopped

  • 2 cups grated cheese

Step-by-Step Instructions

  1. Prepare the filling. Add the cooked chicken, capsicum, onion, paprika, garlic powder and cumin to a bowl. Season lightly with salt and pepper and mix well.

  2. Build the quesadillas. Place a tortilla flat and sprinkle cheese over one half. Add a layer of chicken mixture, then top with a little more cheese.

  3. Fold the tortilla. Fold the empty half over the filling and gently press down.

  4. Heat the pan. Lightly brush a large frying pan with olive oil and place over medium heat.

  5. Cook until golden. Add the quesadilla and cook for around 2–3 minutes per side, or until the tortilla is golden and crisp and the cheese has melted.

  6. Repeat and slice. Cook the remaining quesadillas, then allow them to sit for a minute before cutting into wedges.

  7. Serve warm. Serve with sour cream, guacamole or salsa if desired.
