These easy garlic butter mushrooms are golden around the edges, juicy in the middle and coated in plenty of buttery garlic flavour. They take around 15 minutes from start to finish and only need a handful of everyday ingredients.

They're also one of those little side dishes that can rescue a very ordinary dinner. Spoon them beside steak or chicken, pile them onto mashed potatoes or toast, or simply put the pan in the middle of the table and let everyone help themselves.

Ingredients for Garlic Butter Mushrooms

  • 500 g button or cup mushrooms

  • 40 g unsalted butter

  • 1 tablespoon olive oil

  • 3 cloves garlic, minced

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon fresh parsley, finely chopped

Optional:

  • ½ teaspoon dried thyme

  • 1 teaspoon lemon juice

  • Extra butter, for serving

  • Grated Parmesan cheese

Step-by-Step Instructions

  1. Prepare the mushrooms. Wipe the mushrooms clean with a slightly damp paper towel and trim the ends of the stems if needed. Halve any particularly large mushrooms.

  2. Heat the pan. Place a large frying pan over medium-high heat and add the olive oil and half of the butter.

  3. Add the mushrooms. Once the pan is hot, add the mushrooms in a single layer.

  4. Let them brown. Cook without stirring for approximately 3–4 minutes to allow the mushrooms to develop a golden surface.

  5. Turn and continue cooking. Stir the mushrooms and cook for another 3–4 minutes, until browned and tender.

  6. Add the garlic butter. Reduce the heat to medium and add the remaining butter and minced garlic.

  7. Season. Add the salt, black pepper and thyme if using.

  8. Cook briefly. Toss everything together and cook for another 1–2 minutes, just until the garlic is fragrant. Avoid cooking the garlic for too long or it can become bitter.

  9. Finish with parsley. Remove the pan from the heat and stir through the fresh parsley.

  10. Serve immediately. Add a squeeze of lemon or sprinkle of Parmesan if desired and serve while hot.

Helpful Tips

  • Don't overcrowd the frying pan. Mushrooms release moisture as they cook, so giving them space helps them brown instead of steam.

  • Avoid constantly stirring them during the first few minutes — letting them sit against the hot pan creates better colour.
