This easy cottage pie layers rich, savoury beef mince and vegetables underneath creamy mashed potato, then bakes everything together until the top is lightly golden. Ingredients for Easy Cottage Pie
500 g beef mince
1 tablespoon olive oil
1 onion, finely diced
2 carrots, diced
1 cup frozen peas
2 cloves garlic, minced
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1½ cups beef stock
1 teaspoon dried thyme
Salt and black pepper, to taste
For the Mashed Potato:
1 kg potatoes, peeled and chopped
50 g butter
½ cup milk
Salt and black pepper, to taste
Optional:
½ cup grated cheese
1 cup frozen corn
Fresh parsley, for serving
Step-by-Step Instructions
Cook the potatoes. Place the potatoes in a large saucepan of salted water and boil for 15–20 minutes, or until completely tender.
Cook the onion and carrots. Meanwhile, heat the olive oil in a large frying pan over medium heat. Add the onion and carrots and cook for 4–5 minutes until beginning to soften.
Brown the beef. Add the beef mince and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
Add the flavour. Stir in the garlic, tomato paste, Worcestershire sauce and thyme. Cook for another minute.
Make the filling. Pour in the beef stock and stir well. Simmer for 8–10 minutes until the sauce has reduced and thickened. Stir through the peas and season to taste.
Mash the potatoes. Drain the cooked potatoes, then add the butter and milk. Mash until smooth and creamy. Season with salt and pepper.
Assemble the cottage pie. Spoon the beef mixture into a large baking dish and spread evenly. Carefully spoon the mashed potato over the top and spread to the edges.
Bake until golden. Bake at 200°C conventional or 180°C fan-forced for 20–25 minutes, or until hot and lightly golden on top.
Rest and serve. Let the cottage pie sit for about 5 minutes before serving.
