2 cups plain flour
¾ cup caster sugar
2 teaspoons baking powder

2 large eggs
¾ cup milk
½ cup vegetable oil
2 teaspoons vanilla extract
1½ cups blueberries, fresh or frozen

1 tablespoon raw sugar, for sprinkling

Step-by-Step Instructions
Preheat the oven. Heat your oven to 200°C conventional or 180°C fan-forced. Line a 12-hole muffin tray with paper cases.
Combine the dry ingredients. Add the flour, caster sugar, baking powder and salt to a large bowl and stir until combined.
Mix the wet ingredients. In a separate bowl, whisk together the eggs, milk, vegetable oil and vanilla.
Make the batter. Pour the wet ingredients into the dry ingredients and gently fold together until just combined.
Add the blueberries. Gently fold the blueberries through the batter. Avoid overmixing.
Fill the muffin cases. Divide the mixture evenly between the 12 muffin cases. Sprinkle a little raw sugar over the tops if desired.
Bake until golden. Bake for 18–22 minutes, or until the muffins are risen and lightly golden and a skewer inserted into the centre comes out clean.
Cool and serve. Leave the muffins in the tray for 5 minutes before transferring them to a wire rack.
