A Simple Soup for Cozy Family Meals
This creamy pumpkin soup is naturally thick, smooth, and comforting — made without cream and using simple, everyday ingredients. Adding optional potato or sweet potato gives the soup body and flavour while keeping it affordable and nourishing.
Finished with a dollop of sour cream just before serving, this is the kind of meal that brings warmth to the table and invites everyone to slow down and enjoy a simple moment together.
Ingredients for Creamy Pumpkin Soup
1 kg pumpkin, peeled and chopped
1 onion, chopped
3 cups chicken or vegetable stock
Salt and pepper, to taste
Optional:
1–2 potatoes or sweet potatoes, peeled and chopped (adds flavour and thickness)
Sour cream, for serving
Step-by-Step Instructions
Add the vegetables to a large pot, including pumpkin, onion, and optional potatoes or sweet potatoes.
Pour in the stock and bring to the boil over medium-high heat.
Reduce heat and simmer for 20–25 minutes until all vegetables are very soft.
Blend until smooth using a stick blender or countertop blender.
Season to taste with salt and pepper.
