Ingredients
You will need:
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 can (14 oz) diced tomatoes
6 cups vegetable or chicken broth
1 cup small pasta or rice
Salt and black pepper, to taste
Optional: leafy greens (spinach or kale), fresh herbs
Instructions
Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 4–5 minutes. Stir in garlic and cook for 30 seconds until fragrant.Add vegetables
Add carrots and celery and cook for 3–4 minutes, stirring occasionally.Build the soup
Stir in diced tomatoes and broth. Bring to a gentle boil.Simmer
Add pasta or rice, reduce heat, and simmer for 20–25 minutes, until tender.Finish & serve
Season with salt and pepper. Add greens or herbs if using and cook until wilted. Serve warm.
