This easy shepherd’s pie combines savoury lamb mince and vegetables beneath a generous layer of creamy mashed potato, then bakes everything together until bubbling around the edges and beautifully golden on top. It's hearty, straightforward and made with familiar supermarket ingredients.
This is proper put-the-dish-in-the-middle-of-the-table food. There's no fancy plating required — just spoon out generous portions while it's warm and enjoy a comforting meal together. It's especially good on those cooler evenings when dinner needs to feel like dinner.
Ingredients for Easy Shepherd’s Pie
For the Lamb Filling:
500 g lamb mince
1 tablespoon olive oil
1 onion, finely diced
2 cloves garlic, minced
1 carrot, finely diced
1 cup frozen peas
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 tablespoon plain flour
1½ cups beef or lamb stock
½ teaspoon salt
¼ teaspoon black pepper
For the Mashed Potato:
1 kg potatoes, peeled and chopped
50 g butter
½ cup milk
Salt and black pepper, to taste
Optional:
½ cup grated cheese, for topping
Extra vegetables such as corn or celery
Fresh parsley, for serving
Step-by-Step Instructions
Cook the potatoes. Place the chopped potatoes in a large saucepan of salted water. Bring to the boil and cook for 15–20 minutes, or until completely tender.
Start the filling. While the potatoes cook, heat the olive oil in a large frying pan over medium-high heat.
Cook the vegetables. Add the onion and carrot and cook for 4–5 minutes until beginning to soften. Add the garlic and cook for another 30 seconds.
Brown the lamb. Add the lamb mince and cook for 5–7 minutes, breaking it apart with a wooden spoon until browned.
Build the flavour. Stir through the tomato paste, Worcestershire sauce, thyme, rosemary, salt and pepper.
Add the flour. Sprinkle the flour over the lamb and stir for about 1 minute.
Make the gravy. Gradually pour in the stock while stirring. Add the frozen peas and simmer for 8–10 minutes, until the filling has thickened.
Make the mashed potato. Drain the cooked potatoes well. Add the butter and milk, then mash until smooth and creamy. Season to taste.
Assemble the pie. Spoon the lamb mixture into a large baking dish and spread it evenly.
Add the potato. Spoon the mashed potato over the lamb filling and gently spread it to the edges. Rough up the surface with a fork to create little ridges that can brown in the oven.
Add cheese if using. Sprinkle grated cheese lightly over the top.
Bake until golden. Bake at 200°C conventional or 180°C fan-forced for 20–25 minutes, until bubbling around the edges and golden on top.
Rest and serve. Let the shepherd's pie stand for about 5 minutes before serving.
