A Simple, Creamy Potato Salad Made the Samoan Way
This Easy Potato Salad is a creamy, comforting favourite made with just a handful of simple ingredients — potatoes, eggs, and Best Foods mayo. It’s a no-fuss side dish you can whip up quickly for BBQs, church gatherings, Christmas lunch, or any family meal.
Keep it classic, or add colourful extras like sweet potato, canned beetroot, or mixed veggies to make it your own.
Ingredients for Simple Potato Salad
1 kg potatoes, peeled and chopped
3 eggs, boiled and chopped
½–1 cup Best Foods mayonnaise (to taste)
Salt & pepper, to taste
Garlic powder, to taste
Onion powder (optional)
Optional Add-Ins:
1–2 sweet potatoes, cooked and chopped
Canned beetroot, drained and diced
Cooked mixed frozen vegetables
Spring onions (for garnish)
Step-by-Step Instructions
Cook potatoes. Peel (optional) and chop potatoes into even pieces. Boil in salted water until just tender.
Cook eggs. Boil eggs, peel, and chop.
Cool slightly. Drain potatoes and let them cool for a few minutes — warm potatoes absorb flavour better.
Combine. Add potatoes and chopped eggs to a large bowl.
Add mayo. Mix through Best Foods mayonnaise until everything is coated and creamy.
Season. Add salt, pepper, garlic powder, and onion powder (optional) to taste.
Add optional extras. Gently fold in sweet potato, canned beetroot, or mixed veggies if using.
Serve. Garnish with spring onions if desired.
Helpful Tips
Best Foods mayo gives the richest flavour — highly recommended.
Add mayo slowly so you can control the creaminess.
Don’t overcook the potatoes or they will fall apart when mixing.
Add canned beetroot last if you don’t want the whole salad turning pink.
