Ingredients for Easy Lemon Cake
2 cups plain flour
2 teaspoons baking powder
¼ teaspoon salt
¾ cup caster sugar

¾ cup milk

¼ cup fresh lemon juice

1½ cups icing sugar, sifted

Step-by-Step Instructions
Preheat the oven. Heat your oven to 180°C conventional or 160°C fan-forced. Grease and line a 20 cm round cake tin.
Combine the dry ingredients. Add the flour, baking powder and salt to a bowl and whisk together.
Cream the butter and sugar. In a separate large bowl, beat the softened butter and caster sugar until pale and creamy.
Add the eggs. Beat in the eggs one at a time until combined.
Add the lemon. Mix through the lemon zest, lemon juice and vanilla.
Finish the batter. Add the dry ingredients and milk gradually, alternating between the two. Mix gently until just combined.
Bake the cake. Spoon the batter into the prepared cake tin and smooth the top. Bake for 35–40 minutes, or until a skewer inserted into the centre comes out clean.
Cool completely. Leave the cake in the tin for 10 minutes before transferring it to a wire rack.
Make the lemon icing. Mix the icing sugar with enough lemon juice to create a thick but pourable icing.
Ice the cake. Once completely cool, spoon the lemon icing over the cake and allow it to gently run down the sides.
