An Easy Moist Carrot Cake
This easy carrot cake is soft, moist and warmly spiced, with plenty of freshly grated carrot throughout. The batter is simple to prepare without an electric mixer, while a creamy frosting turns it into a classic homemade cake that's impressive without being difficult.
It's the sort of cake that works for almost anything — afternoon tea, birthdays, church gatherings or simply having something homemade on the table when family drops by. Cut generous slices, make a cup of tea and let everyone help themselves.
Ingredients for Easy Carrot Cake
2 cups plain flour
1½ teaspoons baking powder
1 teaspoon bicarbonate of soda
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1 cup brown sugar
½ cup caster sugar
3 large eggs
1 cup vegetable oil
2 teaspoons vanilla extract
2½ cups finely grated carrot
For the Cream Cheese Frosting:
250 g cream cheese, softened
75 g unsalted butter, softened
2 cups icing sugar, sifted
1 teaspoon vanilla extract
Optional:
½ cup chopped walnuts or pecans
½ cup sultanas
Extra chopped nuts, for decorating
Step-by-Step Instructions
Preheat the oven. Heat your oven to 180°C conventional or 160°C fan-forced. Grease and line a 22 cm round cake tin.
Combine the dry ingredients. Add the flour, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt to a large bowl. Whisk together.
Mix the wet ingredients. In another large bowl, whisk the brown sugar, caster sugar, eggs, vegetable oil and vanilla until well combined.
Add the carrot. Stir the grated carrot through the wet mixture.
Make the batter. Add the dry ingredients and gently fold everything together until just combined. Fold through nuts or sultanas if using.
Bake the cake. Pour the batter into the prepared tin and smooth the top. Bake for 40–50 minutes, or until a skewer inserted into the centre comes out clean.
Cool completely. Leave the cake in the tin for 10 minutes before transferring it to a wire rack to cool completely.
Make the frosting. Beat the cream cheese and butter until smooth. Gradually add the icing sugar, then mix through the vanilla until creamy.
Decorate the cake. Spread the cream cheese frosting generously over the completely cooled cake. Sprinkle with chopped nuts if desired.
