A Simple Takeaway-Style Dinner at Home
This easy fried rice with egg is one of those reliable meals you can make at a moment’s notice. It’s fast, affordable, and uses ingredients most families already have in the fridge and pantry.
It’s also a great way to turn leftovers into something comforting and satisfying — the kind of no-fuss meal that brings everyone together around the table without stress.
Ingredients for Easy Fried Rice with Egg
3 cups cooked rice, cold (day-old works best)
3 eggs, lightly beaten
2 tablespoons oil (vegetable or canola)
1 small onion, finely diced
2 cloves garlic, minced
1/2 cup frozen peas and carrots
2–3 tablespoons soy sauce (to taste)
1 teaspoon sesame oil (optional)
Optional:
Sliced spring onions, to serve
Cooked chicken, ham, or prawns
Step-by-Step Instructions
Scramble the eggs – Heat 1 teaspoon of oil in a large frying pan or wok over medium heat. Pour in the eggs and gently scramble until just set. Remove and set aside.
Cook the aromatics – Heat remaining oil in the pan. Add onion and garlic and cook for 1–2 minutes until soft and fragrant.
Add the rice – Add the cold rice, breaking up any clumps. Stir-fry for 2–3 minutes until heated through.
Season and combine – Add peas and carrots, soy sauce, and sesame oil (if using). Return eggs to the pan and toss everything together until well combined and hot.
Serve – Taste and adjust seasoning if needed. Serve immediately.
Helpful Tips
Cold rice prevents the fried rice from becoming mushy.
Use reduced-salt soy sauce for a more family-friendly option.
Cook over medium-high heat for the best texture.
