An Easy, Flavourful Meal Ready in Minutes

Chicken Fried Rice is a go-to family favourite — fast, delicious, and made with simple ingredients you probably already have. It’s perfect for busy nights or when you need a quick meal that still tastes amazing.

With tender chicken, fluffy rice, and colourful veggies all tossed in a savoury sauce, this recipe brings comfort, flavour, and convenience to the table. It’s also a great way to stretch leftovers and reduce food waste.

Ingredients for Chicken Fried Rice

  • 2 cups cooked rice (preferably day-old)

  • 300g chicken breast or thigh, diced

  • 1 onion, diced

  • 2–3 garlic cloves, minced

  • 2 tbsp oil

  • 1 cup frozen mixed veggies (peas, corn, carrot)

  • 2 eggs

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce (optional)

  • 1 tsp sesame oil (optional)

  • Salt & pepper, to taste

  • Spring onions, sliced (for serving)

Optional Add-Ins:

  • Chilli flakes

  • Extra veggies (capsicum, spinach, cabbage)

  • Cooked bacon or ham

Step-by-Step Instructions

  1. Cook the chicken. Heat oil in a large pan or wok. Add diced chicken, season with salt and pepper, and cook until browned.

  2. Add aromatics. Stir in onion and garlic. Cook until softened.

  3. Add vegetables. Pour in frozen veggies and cook for 2–3 minutes.

  4. Scramble the eggs. Push everything to one side. Add a little more oil, crack in the eggs, and scramble until cooked.

  5. Add rice. Stir in the cooked rice, breaking up any clumps.

  6. Add sauces. Pour in soy sauce, oyster sauce, and sesame oil. Toss well to coat.

  7. Serve. Finish with spring onions and adjust seasoning to taste.

Helpful Tips

  • Day-old rice works best — fresh rice is too soft.

  • Use high heat for the best “fried rice” flavour.

  • Add sauces gradually and taste as you go.

  • Swap chicken for prawns, beef, or tofu.
