Ingredients for Easy Creamy Mushroom Pasta
400 g pasta of choice (penne, fettuccine, or spirals)
250 g mushrooms, sliced
1 small onion, finely diced
2 cloves garlic, minced
1 cup cream
½–1 cup pasta water or vegetable stock
1 cup grated cheese
1 tablespoon butter or oil
Optional:
Black pepper, to taste
Extra cheese for serving
Step-by-Step Instructions
Cook the pasta in salted boiling water according to packet instructions. Reserve ½ cup of pasta water, then drain.
Cook the mushrooms by heating butter or oil in a large pan over medium heat. Add mushrooms and cook until softened and lightly golden.
Add the aromatics by stirring in onion and cooking until soft, then add garlic and cook until fragrant.
Make the sauce by adding cream and pasta water or stock. Stir and bring to a gentle simmer.
Combine the pasta by adding the cooked pasta to the sauce and tossing until well coated.
Finish with cheese by stirring in grated cheese until melted and creamy. Remove from heat.
Serve hot, with extra cheese if desired.
Helpful Tips
Use any mushrooms you have—button or Swiss brown both work well.
Pasta water helps the sauce cling better—add gradually.
Don’t rush the mushrooms; browning adds flavour.
This sauce thickens as it sits, so serve straight away.
