Ingredients for Easy Creamy Chicken Pasta Bake
500g chicken breast or thigh, diced
1 tablespoon olive oil
1 onion, finely diced
2 cloves garlic, minced
1 teaspoon dried Italian herbs
Salt and pepper, to taste
300ml thickened cream
1 cup chicken stock
400g pasta (penne or spirals)
1 cup grated cheese
Optional:
Spinach or peas
A sprinkle of parmesan on top
Step-by-Step Instructions
Cook the pasta – Bring a large pot of salted water to the boil and cook pasta according to packet instructions. Drain and set aside.
Cook the chicken – Heat olive oil in a large pan over medium heat. Add chicken and cook until lightly golden. Remove and set aside.
Build the sauce – In the same pan, cook onion until soft. Add garlic and herbs and cook for 30 seconds. Pour in cream and chicken stock, season with salt and pepper, and simmer for 5 minutes.
Combine – Return chicken to the pan along with cooked pasta. Stir to coat everything evenly.
Bake – Transfer to a baking dish, sprinkle with grated cheese, and bake at 200°C (fan-forced) for 15–20 minutes until golden and bubbling.
