An Easy Chicken Noodle Dinner in 25 Minutes
These easy chicken stir fry noodles combine juicy chicken, colourful vegetables and noodles coated in a simple homemade stir fry sauce. Everything comes together quickly in one pan, making this a handy recipe for nights when dinner needs to happen without too much planning.
It's also an easy meal to stretch for the family. Add whatever vegetables are sitting in the fridge, bring the pan straight to the table and let everyone help themselves. Simple, filling food is often all you need to gather everyone together at the end of the day.
Ingredients for Chicken Stir Fry Noodles
500 g boneless chicken breast or thigh, thinly sliced
400 g fresh hokkien or stir fry noodles
1 tablespoon vegetable oil
1 red capsicum, thinly sliced
1 carrot, thinly sliced
1 small broccoli, cut into small florets
2 spring onions, sliced
2 cloves garlic, minced
1 teaspoon grated fresh ginger
For the Stir Fry Sauce:
¼ cup soy sauce
2 tablespoons oyster sauce
1 tablespoon honey or brown sugar
1 teaspoon sesame oil
¼ cup water
1 teaspoon cornflour
Optional:
Sesame seeds
Extra spring onion
Chilli flakes or sliced chilli
Step-by-Step Instructions
Prepare the noodles. Cook or loosen the noodles according to the packet directions, then drain and set aside.
Make the sauce. Whisk together the soy sauce, oyster sauce, honey, sesame oil, water and cornflour until smooth.
Cook the chicken. Heat the vegetable oil in a large frying pan or wok over medium-high heat. Add the chicken and cook for 4–5 minutes, tossing regularly, until golden and cooked through. Remove and set aside.
Stir fry the vegetables. Add the carrot and broccoli to the pan and cook for 2–3 minutes. Add the capsicum and cook for another 1–2 minutes.
Add the aromatics. Stir in the garlic and ginger and cook for about 30 seconds until fragrant.
Return the chicken. Add the cooked chicken back to the pan and toss through the vegetables.
Add the noodles and sauce. Add the noodles, then pour over the sauce. Toss everything together for 1–2 minutes until the noodles are hot and evenly coated.
Serve hot. Scatter with spring onions and sesame seeds if using, then serve immediately.
