A Quick Beef Stir Fry for Busy Nights

This easy beef stir fry combines tender strips of beef, crisp vegetables and a simple homemade stir fry sauce in one pan. It comes together in around 25 minutes, making it an easy option when you want a proper family dinner without spending all night in the kitchen.

Serve it over steamed rice or noodles and bring the whole pan to the table. It's colourful, filling and easy to adapt depending on the vegetables you already have waiting in the fridge.

Ingredients for Beef Stir Fry

  • 500 g beef strips

  • 1 tablespoon vegetable oil

  • 1 red capsicum, sliced

  • 1 small broccoli, cut into florets

  • 1 carrot, thinly sliced

  • 1 small onion, sliced

  • 2 cloves garlic, minced

  • 1 teaspoon grated fresh ginger

For the Stir Fry Sauce:

  • ¼ cup soy sauce

  • 2 tablespoons oyster sauce

  • 1 tablespoon honey or brown sugar

  • 1 teaspoon sesame oil

  • ½ cup water

  • 1 tablespoon cornflour

Optional:

  • Sliced spring onions

  • Sesame seeds

  • Steamed rice or noodles, for serving

Step-by-Step Instructions

  1. Make the sauce. Whisk together the soy sauce, oyster sauce, honey, sesame oil, water and cornflour until smooth. Set aside.

  2. Heat the pan. Heat the vegetable oil in a large frying pan or wok over high heat.

  3. Cook the beef. Add the beef strips in a single layer and cook quickly for 2–3 minutes, tossing until browned. Remove from the pan and set aside.

  4. Cook the vegetables. Add the onion, carrot and broccoli to the same pan. Stir fry for 3–4 minutes before adding the capsicum.

  5. Add the garlic and ginger. Stir through the garlic and ginger and cook for about 30 seconds until fragrant.

  6. Return the beef. Add the cooked beef back to the pan and toss everything together.

  7. Add the sauce. Give the sauce another quick stir, then pour it into the pan. Cook for 1–2 minutes, stirring until the sauce thickens and coats the beef and vegetables.

  8. Serve immediately. Remove from the heat and serve with steamed rice or noodles.

Helpful Tips

  • Slice the beef thinly against the grain to help keep it tender.

  • Have all your ingredients prepared before cooking because stir frying moves quickly.

  • Keep the pan hot and avoid overcrowding it so the beef browns rather than steams.

  • Don't overcook the vegetables — keeping a little crunch gives the stir fry better texture.
