Easy Takeaway-Style Chicken Fried Noodles

These easy chicken fried noodles combine tender pieces of chicken, noodles, egg and colourful vegetables with a simple savoury sauce. Everything cooks quickly in one wok or frying pan, making it a great option when you want dinner on the table without spending the whole evening in the kitchen.

It's also an easy clean-out-the-fridge kind of meal. Use the vegetables you already have, throw everything into the pan and serve it straight away while the noodles are hot. Simple, generous food that can feed the family without another takeaway order.

Ingredients for Chicken Fried Noodles

  • 400 g fresh egg noodles or hokkien noodles

  • 500 g boneless skinless chicken thighs, thinly sliced

  • 2 eggs, lightly beaten

  • 1 small onion, thinly sliced

  • 1 carrot, cut into thin strips

  • 1 red capsicum, thinly sliced

  • 2 cups shredded cabbage

  • 2 cloves garlic, minced

  • 2 tablespoons vegetable oil

For the Sauce:

  • 3 tablespoons soy sauce

  • 1 tablespoon oyster sauce

  • 1 tablespoon sweet soy sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon brown sugar

  • 2 tablespoons water

Optional:

  • 2 spring onions, sliced

  • Bean sprouts

  • Frozen peas

  • Broccoli

  • Sesame seeds, for serving

Step-by-Step Instructions

  1. Prepare the noodles. Prepare the noodles according to the packet instructions. Drain well and separate gently so they don't clump together.

  2. Make the sauce. Combine the soy sauce, oyster sauce, sweet soy sauce, sesame oil, brown sugar and water in a small bowl. Set aside.

  3. Heat the pan. Heat 1 tablespoon of vegetable oil in a large wok or frying pan over medium-high to high heat.

  4. Cook the chicken. Add the sliced chicken and stir-fry for approximately 5–6 minutes, until golden and cooked through. Transfer to a plate.

  5. Cook the egg. Add the beaten eggs to the hot pan and gently scramble until just cooked. Transfer them to the plate with the chicken.

  6. Cook the vegetables. Add the remaining oil, then add the onion, carrot, capsicum and cabbage. Stir-fry for 3–4 minutes so they're cooked but still have a little bite.

  7. Add the garlic. Stir through the minced garlic and cook for approximately 30 seconds until fragrant.

  8. Add the noodles. Increase the heat if needed and add the drained noodles to the pan.

  9. Let them fry. Spread the noodles across the hot surface and leave them undisturbed for around 30–60 seconds before tossing. This helps create little caramelised edges rather than simply steaming them.

  10. Add the sauce. Pour the prepared sauce over the noodles and toss thoroughly until evenly coated.

  11. Return the chicken and egg. Add the cooked chicken and scrambled egg back into the pan.

  12. Fry everything together. Toss over high heat for another 1–2 minutes, until everything is hot and the sauce has coated the noodles.

  13. Serve immediately. Scatter over sliced spring onions or sesame seeds if desired.
