Easy Beef Tacos for Busy Nights
These easy beef tacos combine juicy seasoned beef mince with crunchy or soft taco shells, grated cheese and fresh toppings. The beef filling comes together in one pan and the whole meal can be on the table in around 25 minutes.
Tacos are also wonderfully forgiving when feeding a family. Put everything in the middle of the table and let people build their own — extra cheese, no tomato, mountains of lettuce, suspicious amounts of sour cream 😂. Everyone gets what they like while still sharing the same meal.
Ingredients for Easy Beef Tacos
500 g beef mince
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon dried oregano
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons tomato paste
⅓ cup water
8–10 taco shells or small tortillas
1 cup grated cheese
2 cups shredded lettuce
2 tomatoes, diced
Optional:
Sour cream
Avocado or guacamole
Corn
Sliced spring onion
Fresh coriander
Lime wedges
Mild salsa
Step-by-Step Instructions
Prepare the toppings. Shred the lettuce, dice the tomatoes, grate the cheese and prepare any optional toppings before cooking the beef.
Cook the onion. Heat the olive oil in a large frying pan over medium-high heat. Add the onion and cook for 2–3 minutes until softened.
Brown the mince. Add the beef mince and cook for 5–7 minutes, breaking it apart with a wooden spoon until browned.
Add the garlic and seasoning. Stir through the garlic, cumin, paprika, oregano, onion powder, salt and pepper. Cook for another minute until fragrant.
Make the taco filling. Add the tomato paste and water. Stir well and simmer for 3–5 minutes until the beef is juicy and well coated but not watery.
Warm the shells. Heat the taco shells or tortillas according to the packet instructions.
Build the tacos. Spoon the warm beef mixture into each taco and add lettuce, tomato and grated cheese.
Add your favourites. Finish with sour cream, avocado, salsa, coriander or a squeeze of fresh lime if desired.
Serve immediately. Place everything on the table and let everyone build their tacos while the beef is warm.

Let the tomato paste cook briefly with the beef to give the filling a richer flavour.
