These easy beef nachos combine crispy corn chips, seasoned beef mince and plenty of melted cheese for a simple meal that can be on the table in around 30 minutes. Add your favourite toppings and everyone can make their plate exactly how they like it.

Ingredients for Beef Nachos
500 g beef mince
1 tablespoon olive oil
1 small onion, finely diced
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and black pepper, to taste
2 tablespoons tomato paste
¼ cup water
300 g corn chips
2 cups grated cheese
Optional:
Diced tomatoes
Corn kernels
Sliced spring onion
Avocado or guacamole
Sour cream
Salsa
Fresh coriander
Jalapeños
Step-by-Step Instructions
Preheat the oven. Heat your oven to 200°C and prepare a large baking tray or oven-safe dish.
Cook the onion. Heat olive oil in a large frying pan over medium heat. Add the onion and cook for 2–3 minutes until softened.
Brown the mince. Add the beef mince and cook until browned, breaking it apart with a wooden spoon as it cooks. Drain excess fat if needed.
Add the flavour. Stir through the paprika, cumin, garlic powder, onion powder, salt, pepper and tomato paste.
Make the beef mixture. Add the water and stir well. Cook for another 2–3 minutes until the mince is juicy but not watery.
Build the nachos. Spread half the corn chips over the tray. Add half the beef and cheese, then repeat with the remaining chips, beef and cheese.
Bake until melted. Bake for 8–10 minutes, or until the cheese is completely melted and bubbling.
Add the toppings. Remove from the oven and finish with your favourite toppings. Serve immediately while everything is hot and crispy.

Layer the chips, beef and cheese instead of putting everything on top so you don't end up with plain chips hiding underneath.
Keep the mince mixture thick rather than watery to help the corn chips stay crispy.
