1.5 kg potatoes, peeled and cut into chunks
Salt, to taste
Olive oil or vegetable oil
Black pepper, to taste

Preheat oven to 220°C (fan-forced).
Boil potatoes in salted water until just tender.
Drain well and shake in the pot to rough up the edges.
