Ingredients for Cheap Sausage & Rice
6 beef or pork sausages, sliced
1 tablespoon oil
1 onion, diced
2 cloves garlic, crushed
1 cup white rice
2 cups chicken stock or water
1 cup frozen mixed vegetables
Salt, to taste
Black pepper, to taste

½ teaspoon paprika
Chopped parsley for serving
Step-by-Step Instructions
Brown the sausages in a large pan with oil over medium heat. Remove and set aside.
Cook onion and garlic in the same pan until softened.
Stir in rice and cook for 1 minute until lightly coated.
Add stock and sausages, bring to a gentle simmer.
Cover and cook on low heat for 15 minutes.
Add vegetables, cover again, and cook for 5 more minutes.
Rest for 5 minutes, then fluff gently and serve.
