Ingredients
You will need:
12 oz (340 g) pasta (spirals, penne, or bowties)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup red onion, finely chopped
½ cup olives or capsicum (optional)
1 cup shredded cheese or crumbled feta
¼ cup Italian dressing or olive oil vinaigrette
Salt and black pepper, to taste
Optional: fresh herbs (parsley or basil)
Instructions
Cook the pasta
Cook pasta according to package instructions until al dente. Drain and allow to cool slightly.Prepare the vegetables
Chop tomatoes, cucumber, onion, and olives or capsicum if using. Place in a large bowl.Combine
Add cooked pasta to the bowl with vegetables.Dress the salad
Pour over dressing and toss gently until well combined.Season & chill
Season with salt and pepper to taste. Chill for 20–30 minutes before serving if desired.

Rinse pasta briefly with cold water to stop cooking.
