Ingredients
You will need:
12 oz (340 g) pasta (penne, fusilli, or spirals)
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup broccoli florets
1 cup diced capsicum or bell peppers
1 cup zucchini, sliced
2½ cups vegetable broth
1 teaspoon Italian seasoning
Salt and black pepper, to taste
1½ cups shredded cheese (cheddar, mozzarella, or a blend)
Optional: fresh herbs or chilli flakes for garnish
Instructions
Sauté aromatics
Heat olive oil in a large skillet or deep pan over medium heat. Add onion and cook until softened, then stir in garlic and cook for 30 seconds until fragrant.Add vegetables
Add broccoli, capsicum, and zucchini. Cook for 2–3 minutes until slightly tender.Cook the pasta
Add pasta, vegetable broth, Italian seasoning, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer uncovered for 12–15 minutes, stirring often.Add cheese
Once pasta is tender and liquid mostly absorbed, reduce heat and stir in shredded cheese until melted and creamy.Serve
Taste and adjust seasoning. Serve warm with herbs or chilli flakes if desired.
