Easy Homemade Chocolate Muffins
These easy chocolate muffins are soft, moist and full of chocolate flavour, with chocolate chips scattered through every bite. The batter is quick to prepare, requires no mixer and gives you a batch of homemade muffins in around 30 minutes.
They're just as welcome tucked into a lunchbox as they are sitting on the kitchen bench for everyone to grab. Make a batch for the family, put the kettle on and don't be surprised if twelve muffins suddenly become six.
Ingredients for Chocolate Muffins
2 cups plain flour
¾ cup caster sugar
½ cup unsweetened cocoa powder
2 teaspoons baking powder
½ teaspoon bicarbonate of soda
¼ teaspoon salt
2 large eggs
1 cup milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup chocolate chips
Optional:
Extra chocolate chips, for topping
½ teaspoon instant coffee powder
Icing sugar, for dusting
Step-by-Step Instructions
Preheat the oven. Heat your oven to 200°C conventional or 180°C fan-forced. Line a 12-hole muffin tray with paper cases.
Combine the dry ingredients. Add the flour, sugar, cocoa powder, baking powder, bicarbonate of soda and salt to a large bowl. Whisk until evenly combined.
Mix the wet ingredients. In a separate bowl, whisk together the eggs, milk, vegetable oil and vanilla.
Make the batter. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
Add the chocolate chips. Fold through the chocolate chips, being careful not to overmix the batter.
Fill the muffin cases. Divide the batter evenly between the 12 cases. Sprinkle extra chocolate chips over the tops if desired.
Bake the muffins. Bake for 18–22 minutes, or until the muffins have risen and a skewer inserted into the centre comes out with a few moist crumbs.
Cool and serve. Leave in the tray for 5 minutes before transferring to a wire rack.

Don't overmix the batter or the muffins can become dense instead of soft and fluffy.
Use unsweetened cocoa powder so you can control the sweetness of the muffins.
Check the muffins around the 18-minute mark to avoid overbaking them.
